Sarah's Blueberry Pancakes

Instead of using ready-made mix, I like to whip up a fresh batch from scratch, which allows me to add more eggs and yogurt and make them healthy as well as delicious. Here's my recipe. Hope you enjoy!

 

In a mixing bowl combine:

  • 4 eggs
  • 1 cup yogurt
  • 1 cup milk
  • 1 tsp vanilla

Whisk all ingredients together.

In a second bowl combine:

  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt 
  • 1 cup whole wheat flour (you can also substitute ground flax or bran for part of the whole wheat flour if desired)
  • 1 cup all purpose flour 

Stir the wet ingredients into the dry until just mixed (you may want to add 1/4 cup or more of milk to achieve the desired thickness) then add 2 cup blueberries (fresh or frozen is fine).

Cook in a skillet, then serve with heated maple syrup. Enjoy!!

Note - once you've mastered this recipe, you can experiment by adding mashed bananas or other fruit.
