Lindsey's Hanukkah Latkes

No Hanukkah celebration is complete without a batch (or two or three!) of crispy, fresh potato latkes. Designer Lindsey Levy shares her family recipe for the perfect latkes - delicious all-year round!

Ingredients:

5 Medium Baking Potatoes

1 Onion

1 Clove of Garlic (optional)

2 tbsp Flour

2 Eggs, lightly beaten

Salt + Pepper to taste

Apple Sauce (for serving)

Sour Cream (for serving)

 

Directions:

Grate the potatoes, onion and garlic by hand or in a food processor using the grater attachment and place in colander. Using a clean tea towel and a colander, squeeze out as much liquid as possible.

Place in a bowl and mix together with flour, eggs, salt and pepper.

Heat a generous amount of cooking oil in a stainless steel or cast iron frying pan. Shape strained potato mixture into a pancake shape.  Flatten to ensure it cooks evenly and fry until golden brown, turning once (approximately 2-3 minutes per side). 

Place cooked latkes on a baking sheet lined with paper towel to absorb excess oil.  To keep latkes warm, place on a wire rack on a baking sheet in the oven until ready to serve.

Top with sour cream, apple sauce (or both!)
